Meatball Sliders

The whole family loved these and were asking for, not seconds, but thirds! These would make a great appetizer, but we made them into a meal by adding a salad and some fruit. What was also awesome about this meal is that I walked in the door at 6:30 and had it on the table by 6:57 when I walked out the door for a 7:00 meeting.

Ingredients:
24 frozen meatballs, thawed
2 cups marinara sauce (plus some extra on the side for dipping)
8 ounces sliced provolone or mozzarella
2 Tablespoons butter
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasonings
24 dinner rolls or 8 hot dog buns cut in thirds

Instructions:
Preheat oven to 400 degrees. Line a 9X13 pan with foil and spray with cooking spray.

Warm the meatballs in the marinara sauce in a saucepan over medium heat. Separate the dinner rolls or hot dog buns and place one saucy meatball on the bottom roll. Top with mozzarella or provolone. Place the top roll on and push down slightly. Place meatball slider in the pan and continue to assemble the rest of the sliders.

Microwave butter in a bowl in the microwave until melted. Add garlic powder and Italian seasonings and mix well. Brush tops of buns with melted butter mixture.

Toast in oven for 8-10 minutes or until toasted.

Serve with warmed marinara for dipping.

What did the family think? YUMMO!

Did I change anything? I microwaved the meatballs because I was in a hurry and then I put them in the sauce.

Hummus, Avocado and Tomato Sandwich

Last summer, this heirloom tomato sandwich was my go to lunch. This week I discovered this sandwich. Since we don’t have any tomatoes from our garden yet, I had to buy one. (Which absolutely kills me, by the way. I have five tomato plants with green tomatoes on them. I need it to get warmer around here so the tomatoes will actually ripen!) Anyways, this is a tasty sandwich and great if it’s too hot to turn on the oven.

Ingredients:
2 slices of bread {toasted or not, whichever you’d like}
Hummus [store bought or homemade]
1 small avocado – halved, pitted, peeled and smashed
1 tomato, sliced
salt + pepper to taste

Instructions:
Spread hummus on a slice of bread. Add smashed avocado and sliced tomatoes. Add salt and pepper to taste.

What did the family think? I am the only one eating this yummy creation. It’s been my go to lunch this week.

Crock Pot BBQ Brisket

This is the first brisket I have ever made and it turned out perfect! It was moist and flavorful and it was SO easy! The only trick is remembering to put it in your CrockPot in the morning because it has to cook for at least 9 hours. This would be perfect for a Christmas or New Year’s dinner, too. Happy eating!

Ingredients:
5 1/2 pounds beef brisket
1 3/4 cup barbecue sauce
2 tablespoons brown sugar
2 teaspoon Worcestershire sauce
2 teaspoon black pepper
1 teaspoons garlic salt
1/2 teaspoon onion powder
1/2 teaspoon dry mustard

Instructions:
Combine all ingredients, coating the brisket well. Marinate overnight.

Place brisket and marinade in in crock-pot on low for 9 to 10 hours.

Slice into thin strips, across the grain and serve on rolls or buns.

We had this with applesauce, creamed corn and 7-Up biscuits. We also had some extra BBQ sauce on the side for dipping.

Did I change anything? Well, I forgot to marinate it overnight. Oops. It still turned out perfect. We also didn’t have ours on rolls.

What did the family think? Husband and I thought it was FABULOUS. The kids were less impressed.

CrockPot Hawaiian Pulled Pork

Go ahead and read this recipe, write down the ingredients and then go to the store. This is your dinner for tonight. This is seriously SO good! I can’t wait to eat the leftovers for lunch today. Yum!

Ingredients:
1 Pork Tender Roast (appx 4-5 lbs)
1 can crushed pineapple (in 100% juice)
1/2 cup of brown sugar
1/4 cup dijon mustard
1/2 onion sauteed then added to the crock pot
Jarred jalepeno slices (I only used five, I wish I would have used more.)
Hamburger buns (I used Hawaiian bread sandwich buns…potato buns would be good too)
Mozzarella cheese slices

Cook everything but the buns and the cheese in crock pot on high 4-6 hours.

Serve on buns with mozzarella slices.

We had this with fresh pineapple and kettle chips.

Did I change anything? I reduced the amount of sugar and onions from the original recipe. The recipe above is how I made it.

What did the family think? 3/4 of us thought it was deeelish.

Meatball Sandwich

I realize this is more of a dinner idea than a dinner recipe, but it was quick and easy and was perfect last night when I only had about 35 minutes to make dinner and get it on the table before I had to zip out the door to go to a meeting.

Ingredients:
Hoagie/hot dog or sub sandwich-type buns
Frozen Meatballs
1 jar pasta sauce
Mozzarella Cheese

Instructions:
Thaw frozen meatballs in the microwave.

While those are defrosting heat pasta sauce in a medium sauce pan until it begins to simmer and then turn down to low.

Put warmed up meatballs in the sauce and let them simmer for a few minutes.

Spoon meatballs and sauce into bun and sprinkle with cheese. (If meatballs are too big, you may need to cut them in half.)

Top with a sprinkle or two or three of cheese.

We had this with fruit salad and a green salad.

What did the family think? They loved it and I sent leftovers in lunches today.

Where did this recipe come from? Desperation on my part for a quick meal that everyone would eat.

The Best Homemade Sloppy Joes I’ve Ever Made

I have several homemade sloppy joe recipes on Mommacooks, but this is the best one by far. Our youngest was telling me the other day how much he loves sloppy joes and we were reminiscing about how when he was toddler he could down a whole entire sloppy joe and how cute it was…yada, yada, yada. Fast forward to last night when I actually made the sloppy joes. Turns out he doesn’t like them. Why didn’t I see that coming?

Ingredients:
2 tablespoons vegetable oil
2 onions, roughly chopped
2 ½ pounds ground beef
2 tablespoons tomato paste
2/3 cup BBQ sauce
½ cup ketchup
¼ cup Worcestershire sauce
¼ cup soy sauce
8 to 12 potato rolls (These are my absolute favorite kind of roll/bun.)
Cheddar cheese slices, optional

Instructions:
Heat the oil in a large skillet over medium heat. Add the onions and cook, stirring, until they start to turn translucent, about 4 minutes. Add the beef and cook, stirring and breaking up the meat, until it is finely crumbled, the liquid boils off and the meat begins to brown, about 10 minutes.

Drain the grease off the meat and onions.

Stir in the tomato paste, and keep stirring until the meat is coated. Add the BBQ sauce, ketchup, Worcestershire, soy sauce, and pepper, and bring to a boil. Cook until the sauce is slightly thickened, 4 to 5 minutes.

Did I change anything? I only made 1/2 the recipe which was a mistake. We wanted seconds and there weren’t any. I also added cheddar cheese onto the recipe. I like cheese on my sloppy joe.

What did the family think? Everyone (but the person who was telling me how much they loved sloppy joes last weekend) loved this recipe and was ready for seconds.

Goat Cheese, Meatball and Sun-dried Tomato Panini

This is what happens when you are super hungry and all you have are interesting tidbits of things in your frig to eat. Everything in this panini was leftover from some other recipe I’d made, but together they were yummy and perfect.

Ingredients:
2 slices bread
2 meatballs, cut in half
2 sun-dried tomatoes
Goat cheese, the soft spreadable kind

Instructions:
Make a sandwich out of the above ingredients. If you have a panini maker, use it. If not, heat a skillet over medium low heat and spray with cooking spray. Place sandwich in skillet and put a heavy skillet on top of it for a few minutes. Flip the sandwich over, place the skillet on top of it again and cook for a few minutes on that side.

What did the family think? I was the only one who ate this and I would make another one right now, but I am out of meatballs.

Pepperoncini Crock Pot Roast Beef

This recipe saved us last night. We had violin and tae kwon do testing and this yummy recipe was cooking away while we were out doing all of that and was ready to go when we got home.

Ingredients:
3 lb. beef chuck roast, trimmed of most fat
2 garlic cloves, sliced
16 oz jar pepperoncini peppers (remove stems after cooking)
6 slices provolone cheese
Hamburger buns

Instructions:
Make small cuts in roast and insert garlic slices in cuts.

Place roast in the slow cooker, and pour the entire contents of the jar of pepperoncini, including liquid, over meat.

Cover and cook on LOW for 6 to 8 hours.

Shred meat and serve on buns with pepperoncinis and provolone cheese.

Did I change anything? The original recipe didn’t say anything about the provolone. Everything is better with provolone, in my opinion, so I added that in.

What did the family think? Hubby and I really liked it…a lot. Our oldest ate his, but it wasn’t his favorite. Our youngest ate the cheese and the bun and one bite of meat.

Heirloom Tomato Sandwich

I wait every year for JUST the right time to make these. It’s a small window, but it is worth the wait every time.

Ingredients:
1 heirloom tomato
2 pieces of good quality sandwich bread, toasted
Mayonnaise
Salt, optional

Instructions:
Slice the tomato into thick slices.

Spread mayo on the toast.

Put about two tomato slices on the toast. Sprinkle with salt if you’d like.

Assemble your sandwich and eat. Enjoy!

What did the family think? I am the only one who eats these. They just don’t know what they’re missing which is fine with me because I wouldn’t want to share anyways.

Where did the recipe come from? My dad used to eat tomato sandwiches all the time with TONS of mayo.

Springtime Lunchbox Wrap

My hubby takes his lunch to work about 99% of the time and since he doesn’t like to take leftovers, that really limits what can go in his lunchbox. He has probably been eating a turkey and cheese wrap practically every day for the past five years. He has been toying with some other options and was looking for a vegetarian alternative as well, so he came up with this and it is mighty good.

Ingredients:
Sandwich wrap, we have been using spelt…whole wheat would be good too
Hummus-any flavor, we have been using roasted red pepper
Lettuce or spinach leaves
Cucumber, sliced
Shredded Carrots

Instructions:
Spread the hummus on the wrap and then pile on the toppings making sure not to add too much so that you can actually roll it up.

What did the family think? Hubby and I have been having these for lunch all this week and they are so good. I think I also like them because they are light and “springy” and I love how different foods start making their way onto our plates as spring and summer arrive.
